I am very much in love with our new apartment. I could gush on and on about the fireplace and the chair covers and the window seats and the view ooooh the view!… Every morning when I look out the window at the sea it puts I little extra bounce in my step. I hope I never get tired of that.
But I digress… the point I was really getting to is that we had a little soiree this weekend, a housewarming party of sorts. As well as a chance to introduce my beloved home it was an excuse to invite good friends around to share yummy food and laughs.
With the sun shining this weekend I decided the perfect drink to serve for our housewarming was strawberry lemonade. Strawberries are sweet little mouthfuls of summer for me. Blended up and stirred into a tall glass of lemonade they packed a big summer punch!
Ingredients
- 400g of frozen strawberries
- 1.5 litres Lemonade (eg. Sprite / 7up)
- 1/2 cup icing sugar
- Ice cubes
Makes enough for 6-8 glasses
Instructions
Blend the frozen strawberries in a food processor or with a handheld stick blender until you have a smooth puree. If your blender doesn’t do so well with big icy chunks (like mine) you can take the frozen berries from the freezer and let them thaw a little before starting. Add icing sugar to the blended berries and mix again until combined. Taste test just a little to make sure its not too sour for your liking. Try not too eat the whole lot like big bowl of sorbet… Pop this in the fridge until you’re ready to use it.
To assemble, put a heaped tablespoon of strawberry into the bottom of each glass, top up the glass with lemonade and stir to combine. Alternately you could pour the whole lot into a large jug and let people pour their own. Add ice and serve.
